Preparation
The stuffed Aji peppers are a hot, tasty and quick to prepare appetizer: the gentle hotness of Aji orange peppers makes them suitable to be eaten whole, after a quick baking, and the smoked cheese filling dampens the hotness and mix perfectly with their delicate flavor.
To prepare them, thoroughly wash the Aji orange peppers, make an incision lengthwise and remove seeds and placenta. Then fill them with bits of smoked cheese. If necessary, fold the edges of the peppers with a toothpick.
Arrange the stuffed Aji peppers in a tray lined with baking paper and bake at 180 °C for 10-15 minutes, until the smoked cheese melts and the peppers are baked.
Serve the stuffed Aji peppers hot or warm.
