Ingredients

200 g onion
eggs
grounded habanero pepper
2 teaspoons of cumin powder
1 teaspoon of coriander powder
1 teaspoon of turmeric
a sprinkle of nutmeg
1 spoon of breadcrumbs
sesame seeds
1 spoon of extra-virgin olive oil
white Ciprus salt

Preparation

The spicy onion cake with habanero pepper is a very particular dish, aromatic and hot, that can be served as an appetinzing starter or as a vegetarian main course as well, very suitable for a picnic.

To prepare it, first peel and finely chop the onion. Stew the onion in a covered pan with one spoon of extra-virgin olive oil and a ladle of warm water with a teaspoon of cumin powder, a teaspoon of coriander powder, a teaspoon of turmeric, habanero pepper according to your own taste and... resistance to hot, and a sprinkle of white Ciprus salt. Cook for about 15 minutes, until the onion will become very tender, then let it cool.

Beat two eggs with another teaspoon of cumin powder, habanero pepper, a sprinkle of  white Ciprus salt and nutmeg. Add the stewed onion and a spoon of breadcrumbs, mix well and put the mixture in a baking pan lined with baking paper.

Sprinkle the surface with sesame seeds and bake in preheated oven at 200 °C for about 25-30 minutes. Let the spicy onion cake with habanero pepper cool before serving.
