Pepper and Aji dip

Ingredients
50 g onion
1 yellow bell pepper
2 Aji orange peppers
2 tablespoon extra virgin olive oil
salt
Preparation
To prepare the pepper and Aji dip wash the yellow bell pepper and cut it into chunks, peel and coarsely chop the onion and steam these vegetables in a pan with two tablespoons of olive oil..
Cover the pan and cook over medium heat for about 15 minutes; in the meantime wash the Aji orange peppers and cut them into slices. Add them to the other vegetables, salt and cook for 5 minutes. At this point remove from heat and whip until you get a smooth, creamy sauce.
This pepper and Aji dip is excellent with tortilla chips or nachos, as well as an ingredient for fajitas, tacos or burritos.
