Ingredients (2 portions)

100 g dried chickpeas (or 200 g canned chickpeas)
2 cloves of garlic
2 tablespoons of tahina
red chili pepper according to your taste e. .. resistance to hot!
4 tablespoons of lemon juice
parsley
extra virgin olive oil
salt

Preparation

Hummus bi tahini literally means "chickpeas puree with tahini": it is a tasty appetizer typical of the Middle East and especially of Lebanon. The tahini (or tahina) is a sauce made from toasted white sesame seeds, whose flavor goes well with the chickpeas and the chili pepper.

To prepare it, the dried chickpeas must be soaked in cold water for a whole day. Then fry in a pan a peeled and crushed clove of garlic and the red chili pepper with a tablespoon of olive oil. When the garlic just begin to brown, add the chickpeas and season with a pinch of salt and cover with warm water. Simmer for about 3 hours, adding more hot water if necessary, then drain and set aside the cooking water.

Mash the chickpeas with another clove garlic, tahini, lemon juice, a pinch of salt and a bit of the cooking water sufficient to make the hummus creamy. Then place the hummus bi tahini in a dish and sprinkle with chopped parsley, sesame seeds and chopped red chili pepper according to your taste and... resistance to hot!
