Chicken tinga
Ingredients (2 portions)
250 g chicken breast
200 g canned tomatoes
1/2 onion
2 chipotle chilies
Habanero red pepper according to your taste and... resistance to hot!
coriander
1 clove garlic
salt
extra virgin olive oil
Preparation
Tinga is a typical Mexican hot sauce, made with chicken meat cut into pieces and cooked in oil with red pepper, chopped tomatoes, onions, chopped vegetables and spices. The recipe is variable and can be used as a seasoning on several dishes.
To prepare this version of chicken tinga, first cook for a few minutes the chicken breast in lightly salted boiling water. Let it cool and shred the meat into thin strips.
Heat in a pan 2 tablespoons of extra virgin olive oil and brown the garlic and the onion, cleaned and finely chopped.
When the garlic is golden, remove it and pour into the pan the tomatoes, drained and chopped.
Add salt and coriander and continue cooking over high heat; if vegetables tend to dry add a little of the tomatoes liquid.
When the onion is well cooked add the chicken. Add chopped chipotle chilies to taste and plenty of red habanero peppers, finely chopped, according to your taste e. .. resistance to hot! Continue cooking for another 15 minutes: the meat must be cooked very nearly undone, and blended into the sauce.
Serve the chicken tinga on piping hot corn tortillas, or accompanied by boiled basmati rice.
