Chicken curry with zucchini

Ingredients (2 portions)

300 g chicken breast
250 g zucchini
2 teaspoons of hot curry powder
2 tablespoons of extra virgin olive oil
hot chili powder according to yout taste and... resistance to hot!
salt

Preparation

The chicken curry with zucchini is a quick and easy to prepare but very tasty main course, in which the delicate taste of white meat and zucchini is enriched by the exotic aroma of curry and the spicy touch of chili.

To prepare it, first wash the zucchini and cut them into tsticks, then blanch them in lightly salted boiling water for about 5 minutes and drain thoroughly.

Wash the chicken meat, cut into pieces and brown them in two tablespoons of olive oil for about ten minutes. Add the zucchini and two teaspoons of spicy curry dissolved in a ladle of hot water, salt and sprinkle with hot chili powder according to your taste and... resistance to hot!

Lower the heat and continue cooking for another 10 minutes, until the chicken is tender and will create a thick sauce. Serve the chicken curry with zucchini hot, just ready, possibly accompanied with basmati rice.
